A stunning and whimsical dessert, the Magical Rainbow Pavlova features a crispy meringue shell with a soft, marshmallow-like center, topped with vibrant whipped cream and fresh fruit for a dazzling, colorful finish.

  • 4 large egg whites
  • 1 cup (200g) granulated sugar
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 2 tsp cornstarch
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • Food coloring (rainbow colors)
  • Fresh fruits (e.g., strawberries, kiwi, blueberries, mango)

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 7-inch circle as a guide.
  2. In a clean bowl, beat egg whites on medium speed until soft peaks form.
  3. Gradually add granulated sugar, one tablespoon at a time, beating until stiff, glossy peaks form.
  4. Fold in vinegar, vanilla extract, and cornstarch gently.
  5. Spoon the meringue onto the parchment within the circle, shaping it into a nest with a slight dip in the center.
  6. Bake for 1 hour, then turn off the oven and let the pavlova cool completely inside with the door slightly ajar.
  7. Divide whipping cream into bowls and tint each with a different food coloring.
  8. Whip cream with powdered sugar until stiff peaks form, then swirl together the colored creams gently for a rainbow effect.
  9. Top the cooled meringue with the rainbow whipped cream.
  10. Arrange fresh fruits on top before serving.

Notes

  • Ensure no yolk gets into the egg whites or they won’t whip properly.
  • Use gel food coloring for more vibrant colors.
  • Best assembled just before serving to maintain texture.
