Lollipop Swirl Cupcakes are vibrant, fun, and colorful treats that combine a classic vanilla cupcake base with a rainbow-swirled frosting, topped with a playful lollipop for decoration. Perfect for parties and celebrations.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • Buttercream frosting (4 cups)
  • Gel food coloring (assorted colors)
  • Lollipops (12, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with dry ingredients.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  8. Divide buttercream frosting into separate bowls and tint each with different gel food colors.
  9. Place colored frostings side-by-side in a piping bag fitted with a star tip to create a swirl effect.
  10. Pipe the multicolored frosting onto each cooled cupcake in a swirl pattern.
  11. Top each cupcake with a lollipop for decoration.

Notes

  • Ensure cupcakes are completely cooled before frosting to prevent melting.
  • Use gel food coloring for more vibrant swirls without altering frosting texture.
  • You can customize frosting colors to match party themes.
