- 2 large flour tortillas
- 1 cup cooked chicken breast, shredded
- 1/2 cup bell peppers, diced
- 1/4 cup red onion, diced
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tbsp olive oil or butter
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- Sour cream, salsa, and guacamole (for serving)
- Heat olive oil or butter in a skillet over medium heat.
- Add diced bell peppers and onions, sauté until slightly softened.
- Stir in shredded chicken, black beans, corn, and spices. Cook for 3–4 minutes until heated through.
- Remove mixture from skillet and set aside.
- Place one tortilla in the skillet, sprinkle half of the cheeses evenly over it.
- Add the chicken and veggie mixture on top, then sprinkle remaining cheese.
- Top with the second tortilla and cook for 2–3 minutes until golden brown.
- Flip carefully and cook the other side until golden and cheese is melted.
- Remove from skillet, let rest for 1 minute, then cut into wedges.
- Serve warm with sour cream, salsa, and guacamole.
Notes
- Use any cheese you prefer like Monterey Jack or pepper jack for extra spice.
- You can swap chicken for beef, pork, or keep it vegetarian with extra beans and veggies.
- For a crispier quesadilla, brush tortillas lightly with butter before cooking.
