Lemon Poppy Seed Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 1/2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tbsp poppy seeds
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg, lemon juice, lemon zest, and vanilla extract, and beat until well combined.
  4. In a separate bowl, whisk together the flour, poppy seeds, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
