Kiwi Lime Cake

A refreshing and zesty Kiwi Lime Cake that combines the tropical sweetness of kiwi with the tart brightness of lime, perfect for a light dessert or summer treat.

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup plain yogurt or sour cream
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 2 ripe kiwis, peeled and mashed
  • 1 tsp vanilla extract
  • Optional: Sliced kiwi and lime zest for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in yogurt (or sour cream), lime juice, lime zest, mashed kiwi, and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Optional: Garnish with sliced kiwi and additional lime zest before serving.

Notes

  • You can use Greek yogurt for a denser texture.
  • Add a lime glaze for extra zing by mixing powdered sugar with lime juice.
  • Store the cake in the refrigerator for up to 3 days.
