Heart-Shaped Ravioli with Pink Sauce

Romantic heart-shaped ravioli served with a creamy pink sauce, perfect for Valentine’s Day or a special dinner.

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh spinach (optional)
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup tomato puree
  • 1/4 cup grated Parmesan cheese (for sauce)

Instructions

  1. In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until dough forms, then knead until smooth. Cover and let rest for 30 minutes.
  2. In a bowl, mix ricotta, Parmesan, spinach, nutmeg, salt, and pepper to make the filling.
  3. Roll out pasta dough thinly. Use a heart-shaped cookie cutter to cut shapes. Place a small spoonful of filling on half of the hearts, then top with another heart and press edges to seal.
  4. Bring a large pot of salted water to boil. Cook ravioli in batches for 3–4 minutes until they float. Drain and set aside.
  5. For the sauce, melt butter in a pan over medium heat. Add tomato puree and cook for 2 minutes. Stir in cream and Parmesan, then simmer until thickened. Season with salt and pepper.
  6. Serve ravioli with the pink sauce poured over the top.

Notes

  • You can prepare the ravioli in advance and freeze before cooking.
  • For a richer sauce, add a splash of white wine before adding cream.
  • Use store-bought pasta sheets to save time.
