A light and healthy take on the classic buffalo chicken salad, combining spicy grilled chicken with crisp vegetables and a tangy yogurt-based dressing.

  • 2 cups cooked chicken breast, shredded
  • 1/4 cup hot sauce (like Frank’s RedHot)
  • 1 tbsp olive oil
  • 1/2 cup plain Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/2 cup celery, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup blue cheese crumbles (optional)

Instructions

  1. In a bowl, combine shredded chicken with hot sauce and olive oil. Mix until evenly coated.
  2. In a separate small bowl, whisk together Greek yogurt, apple cider vinegar, garlic powder, onion powder, salt, and pepper to make the dressing.
  3. In a large salad bowl, combine romaine lettuce, cherry tomatoes, shredded carrots, celery, and red onion.
  4. Add the buffalo chicken on top of the salad.
  5. Drizzle the yogurt dressing over the salad and toss to coat.
  6. Sprinkle with blue cheese crumbles if using and serve immediately.
