Grilled Peach & Arugula Salad

- 4 ripe peaches, halved and pitted
- 1 tablespoon olive oil
- 6 cups arugula
- 1/2 cup crumbled goat cheese
- 1/3 cup candied or toasted pecans
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
- Preheat a grill or grill pan over medium heat.
- Brush the peach halves with olive oil.
- Grill the peaches cut-side down for 3–4 minutes until grill marks form and the peaches are slightly softened. Remove and let cool slightly.
- Slice the grilled peaches into wedges.
- In a large bowl or on a serving platter, arrange the arugula.
- Top with grilled peach slices, goat cheese, and pecans.
- Drizzle with balsamic glaze and season with salt and pepper to taste.
- Serve immediately.
Notes
- Use ripe but firm peaches for best grilling results.
- You can substitute goat cheese with feta or blue cheese if preferred.
- Toasted almonds or walnuts can replace pecans for variation.
- Add grilled chicken for a heartier salad.
