Grilled Peach & Arugula Salad

A refreshing summer salad combining sweet grilled peaches, peppery arugula, creamy goat cheese, and crunchy pecans, finished with a tangy balsamic glaze.

Ingredients

  • 4 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 6 cups arugula
  • 1/2 cup crumbled goat cheese
  • 1/3 cup candied or toasted pecans
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Brush the peach halves with olive oil.
  3. Grill the peaches cut-side down for 3–4 minutes until grill marks form and the peaches are slightly softened. Remove and let cool slightly.
  4. Slice the grilled peaches into wedges.
  5. In a large bowl or on a serving platter, arrange the arugula.
  6. Top with grilled peach slices, goat cheese, and pecans.
  7. Drizzle with balsamic glaze and season with salt and pepper to taste.
  8. Serve immediately.

Notes

  • Use ripe but firm peaches for best grilling results.
  • You can substitute goat cheese with feta or blue cheese if preferred.
  • Toasted almonds or walnuts can replace pecans for variation.
  • Add grilled chicken for a heartier salad.
