Grilled Eggplant and Feta Wraps

A delicious and healthy Mediterranean-inspired wrap featuring grilled eggplant, creamy feta cheese, and fresh vegetables wrapped in a soft flatbread.

Ingredients

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup baby spinach or arugula
  • 4 whole wheat or plain flatbreads or wraps
  • 1/4 cup hummus (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush eggplant slices with olive oil and season with salt, pepper, and oregano.
  3. Grill eggplant slices for 3-4 minutes on each side until tender and grill marks appear. Remove and set aside.
  4. Warm the flatbreads slightly on the grill or in a pan.
  5. Spread hummus on each flatbread if using.
  6. Layer grilled eggplant, feta cheese, cherry tomatoes, red onion, and spinach/arugula onto each flatbread.
  7. Drizzle with lemon juice.
  8. Wrap tightly and serve immediately or wrap in parchment for later.

Notes

  • To make it vegan, substitute feta with a plant-based cheese.
  • Grilled zucchini can be used alongside or instead of eggplant.
  • Serve with a side of tzatziki or Greek yogurt dip for extra flavor.
