Grilled Eggplant and Feta Wraps

- 1 large eggplant, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup baby spinach or arugula
- 4 whole wheat or plain flatbreads or wraps
- 1/4 cup hummus (optional)
- 1 tablespoon lemon juice
- Preheat a grill or grill pan over medium-high heat.
- Brush eggplant slices with olive oil and season with salt, pepper, and oregano.
- Grill eggplant slices for 3-4 minutes on each side until tender and grill marks appear. Remove and set aside.
- Warm the flatbreads slightly on the grill or in a pan.
- Spread hummus on each flatbread if using.
- Layer grilled eggplant, feta cheese, cherry tomatoes, red onion, and spinach/arugula onto each flatbread.
- Drizzle with lemon juice.
- Wrap tightly and serve immediately or wrap in parchment for later.
Notes
- To make it vegan, substitute feta with a plant-based cheese.
- Grilled zucchini can be used alongside or instead of eggplant.
- Serve with a side of tzatziki or Greek yogurt dip for extra flavor.
