- 1 large head cauliflower, cut into florets
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley (optional for garnish)
- Crumbled feta cheese (optional for serving)
- Preheat oven to 425°F (220°C).
- Place the cauliflower florets in a large mixing bowl.
- Drizzle with olive oil, and sprinkle with oregano, garlic powder, onion powder, salt, and pepper. Toss well to coat evenly.
- Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and tender.
- Remove from oven, squeeze fresh lemon juice over the top, and garnish with parsley and crumbled feta if using.
- Serve warm as a side dish or light main course.
Notes
- You can add a pinch of red pepper flakes for a bit of heat.
- Serve with tzatziki sauce for extra Greek flavor.
- Use vegan feta or omit cheese for a vegan version.
