Greek-Style Chickpea Stew

A hearty and flavorful Greek-style chickpea stew, simmered with tomatoes, olive oil, and aromatic herbs. Perfect as a comforting vegan meal packed with protein and fiber.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened.
  3. Stir in diced tomatoes, chickpeas, vegetable broth, oregano, thyme, and bay leaf.
  4. Season with salt and pepper. Bring to a boil.
  5. Reduce heat and simmer uncovered for 25-30 minutes, stirring occasionally.
  6. Remove bay leaf, stir in lemon juice, and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.

Notes

  • Can be served with crusty bread or over rice.
  • Tastes even better the next day as flavors deepen.
  • Optional: add spinach or kale for extra greens.
