- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (14 oz) diced tomatoes
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes until softened.
- Stir in diced tomatoes, chickpeas, vegetable broth, oregano, thyme, and bay leaf.
- Season with salt and pepper. Bring to a boil.
- Reduce heat and simmer uncovered for 25-30 minutes, stirring occasionally.
- Remove bay leaf, stir in lemon juice, and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.

- Can be served with crusty bread or over rice.
