Greek Pita Pizzas

- 2 tablespoons lemon juice
- ½ teaspoon garlic powder
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- 6 tablespoons olive oil
- 2 (4-inch) pita bread rounds
- 2 cups torn fresh spinach
- ¼ cup halved grape tomatoes
- 3 tablespoons chopped pimento-stuffed green olives
- ½ cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- Preheat the oven to 375°F (190°C).
- In a medium bowl, whisk together lemon juice, garlic powder, oregano, and basil; slowly whisk in olive oil until the dressing is well blended.
- Brush about 1 tablespoon of the dressing over the pita breads and place them on a baking sheet; reserve the remaining dressing.
- In a large bowl combine spinach, tomatoes, and olives. Pour the reserved dressing over the vegetables and toss to coat. Divide the mixture evenly over each pita; top with mozzarella and feta.
- Bake for about 8 minutes, or until the cheese is melted and the pitas are lightly toasted.
Notes
- For a lighter pizza, use only 4 tablespoons of olive oil in the dressing.
- Swap kalamata olives for pimento-stuffed green olives for a more traditional Greek flavor.
- Add cooked chicken strips after baking for extra protein (this will make the dish non-vegetarian).
