Greek Pita Pizzas

This Greek flatbread pizza made with pita bread and topped with a lemon dressing is quick, easy, and flavorful.

Ingredients

Scale
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • 6 tablespoons olive oil
  • 2 (4-inch) pita bread rounds
  • 2 cups torn fresh spinach
  • ¼ cup halved grape tomatoes
  • 3 tablespoons chopped pimento-stuffed green olives
  • ½ cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, whisk together lemon juice, garlic powder, oregano, and basil; slowly whisk in olive oil until the dressing is well blended.
  3. Brush about 1 tablespoon of the dressing over the pita breads and place them on a baking sheet; reserve the remaining dressing.
  4. In a large bowl combine spinach, tomatoes, and olives. Pour the reserved dressing over the vegetables and toss to coat. Divide the mixture evenly over each pita; top with mozzarella and feta.
  5. Bake for about 8 minutes, or until the cheese is melted and the pitas are lightly toasted.

Notes

  • For a lighter pizza, use only 4 tablespoons of olive oil in the dressing.
  • Swap kalamata olives for pimento-stuffed green olives for a more traditional Greek flavor.
  • Add cooked chicken strips after baking for extra protein (this will make the dish non-vegetarian).
