Greek Lemon Rice

Greek Lemon Rice is a bright and flavorful side dish made with long-grain rice, lemon juice, garlic, and fresh herbs. It’s a perfect complement to Mediterranean dishes and easy to prepare.

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  4. Add the garlic and cook for 1 more minute until fragrant.
  5. Add the rice and stir to coat with the oil and aromatics.
  6. Pour in the broth, lemon juice, lemon zest, salt, and pepper. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and liquid is absorbed.
  8. Remove from heat and let sit, covered, for 5 minutes.
  9. Fluff with a fork and stir in the fresh parsley and dill if using.
  10. Serve warm as a side dish.

Notes

  • Use vegetable broth to keep it vegetarian or vegan.
  • Adjust lemon juice to taste depending on desired tartness.
  • Pairs well with grilled meats, seafood, or roasted vegetables.
