- 450 ml cold black coffee
- 50 ml coffee liqueur (optional)
- 18 sponge finger biscuits (ladyfingers)
- 40 g dark chocolate (80 % cocoa solids), for grating
- 1 tbsp good‑quality cocoa powder (to serve)
- 250 g mascarpone cheese
- 50 ml condensed milk
- 250 ml double cream
- 100 ml Marsala wine
- Mix cold coffee with coffee liqueur in a shallow tray.
- Whisk together mascarpone and condensed milk until smooth.
- In a separate bowl, beat double cream to firm peaks, stir in Marsala, then gently fold into mascarpone mixture.
- Quick‑soak 9 sponge fingers one by one; break in half and place 3 halves into each of six serving glasses.
- Grate some dark chocolate over the sponge layer, then spoon 2 tbsp of mascarpone cream into each glass.
- Repeat dipping with remaining sponge fingers (2 halves per glass), add another layer of chocolate, and top with remaining mascarpone mixture.
- Before serving, dust each pot with cocoa powder using a fine tea strainer; chill for 1–2 hours if time allows.
Notes
- Chilling for an hour or two before serving enhances the flavour and texture.
- Serve in individual glasses for an elegant presentation.
- You can omit coffee liqueur if preferred.
