Gnocchi Soup

A hearty and comforting gnocchi soup made with soft potato gnocchi, tender chicken, vegetables, and a creamy, flavorful broth. Perfect for a cozy meal.

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cups chicken broth
  • 1 cup cooked shredded chicken
  • 1 (16 oz) package potato gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil and butter over medium heat.
  2. Add diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until vegetables are tender.
  3. Stir in thyme, basil, salt, and pepper.
  4. Pour in chicken broth and bring to a boil.
  5. Add cooked chicken and gnocchi to the pot. Reduce heat and simmer for 5-7 minutes until gnocchi are tender and float to the top.
  6. Stir in spinach and cook for 1-2 minutes until wilted.
  7. Reduce heat to low, then stir in heavy cream and Parmesan cheese (if using). Simmer gently for another 2-3 minutes.
  8. Serve hot and enjoy!

Notes

  • You can use rotisserie chicken for convenience.
  • To make it vegetarian, use vegetable broth and omit chicken.
  • Use half-and-half instead of heavy cream for a lighter version.
  • Adjust seasoning to taste before serving.
