- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 4 cups chicken broth
- 1 cup cooked shredded chicken
- 1 (16 oz) package potato gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese (optional)
- In a large pot, heat olive oil and butter over medium heat.
- Add diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes until vegetables are tender.
- Stir in thyme, basil, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Add cooked chicken and gnocchi to the pot. Reduce heat and simmer for 5-7 minutes until gnocchi are tender and float to the top.
- Stir in spinach and cook for 1-2 minutes until wilted.
- Reduce heat to low, then stir in heavy cream and Parmesan cheese (if using). Simmer gently for another 2-3 minutes.
- Serve hot and enjoy!
Notes
- You can use rotisserie chicken for convenience.
- To make it vegetarian, use vegetable broth and omit chicken.
- Use half-and-half instead of heavy cream for a lighter version.
- Adjust seasoning to taste before serving.
