Ghost Meringues

These spooky ghost meringues are light, crispy, and perfect for Halloween treats. Made with just a few ingredients, they are fun to make and decorate.

Ingredients

  • 4 large egg whites
  • 1 cup (200g) granulated sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract (optional)
  • Black decorating gel or melted chocolate (for eyes)

Instructions

  1. Preheat the oven to 200°F (95°C) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until foamy.
  3. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the sugar, 1 tablespoon at a time, while beating on high speed until stiff, glossy peaks form and the sugar is fully dissolved.
  5. Mix in the vanilla extract if using.
  6. Transfer the meringue mixture to a piping bag fitted with a round tip.
  7. Pipe ghost shapes onto the prepared baking sheet.
  8. Bake for 1.5 to 2 hours or until the meringues are dry and easily lift from the parchment. Turn off the oven and let the meringues cool inside for 1 hour.
  9. Once cooled, use decorating gel or melted chocolate to add eyes.
  10. Store in an airtight container at room temperature.

Notes

  • Make sure your bowl and utensils are completely grease-free before whipping the egg whites.
  • Humidity can affect the texture of meringues; dry weather is best.
  • Add flavoring extracts for a twist (like peppermint or almond).
