A colorful and festive Funfetti Birthday Cake made with moist vanilla cake layers filled with rainbow sprinkles, topped with creamy buttercream frosting—perfect for celebrations.

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large egg whites
  • 1 tbsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1/2 cup rainbow sprinkles (jimmies style)
  • For the frosting: 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra sprinkles for decorating

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  4. Add egg whites one at a time, beating well after each addition. Mix in the vanilla and almond extracts.
  5. Combine the milk and sour cream in a separate bowl.
  6. Alternately add the dry ingredients and the milk mixture to the butter mixture, beginning and ending with the dry ingredients. Mix just until combined.
  7. Fold in the rainbow sprinkles gently to avoid color bleeding.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  11. To make the frosting, beat the butter until creamy. Gradually add powdered sugar, vanilla, salt, and cream, and beat until light and fluffy.
  12. Level the cake layers if needed. Frost between the layers, then frost the top and sides of the cake.
  13. Decorate with extra rainbow sprinkles. Chill before serving for cleaner slices.
