Freezer-Friendly Breakfast Burritos

These freezer-friendly breakfast burritos are a convenient and delicious make-ahead meal, perfect for busy mornings. Filled with eggs, cheese, potatoes, and optional veggies or meats, they reheat beautifully straight from the freezer.

  • 12 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups frozen diced hash brown potatoes
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup cooked and crumbled breakfast sausage or bacon (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 810 large flour tortillas

Instructions

  1. In a large bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add potatoes and cook until golden and crispy, about 10 minutes. Remove and set aside.
  3. In the same skillet, heat the remaining oil and sauté bell peppers and onions until soft, about 5 minutes.
  4. Add the eggs to the skillet and cook, stirring, until scrambled and just set. Remove from heat.
  5. Stir in cooked potatoes, sautéed vegetables, and cooked sausage or bacon (if using).
  6. Let the filling cool slightly before assembling burritos.
  7. Warm the tortillas slightly to make them easier to roll.
  8. Spoon the filling onto each tortilla, sprinkle with shredded cheese, and roll into burritos.
  9. Wrap each burrito tightly in foil or plastic wrap and place in a freezer-safe bag or container.
  10. To reheat, unwrap and microwave on high for 1–2 minutes, or until heated through.

  • Use any preferred combination of vegetables or omit meat for a vegetarian option.
  • Wrap burritos individually for easy grab-and-go convenience.
  • To avoid sogginess, allow cooked ingredients to cool before wrapping.
