Flourless Chocolate Cookies

These rich and fudgy flourless chocolate cookies are chewy on the inside and crispy on the edges, perfect for gluten-free chocolate lovers.

Ingredients

  • 3 cups powdered sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 4 large egg whites
  • 1 tbsp vanilla extract
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together powdered sugar, cocoa powder, and salt.
  3. Add egg whites and vanilla extract. Stir until a thick, fudgy batter forms.
  4. Fold in chocolate chips.
  5. Scoop tablespoon-sized mounds of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 8–10 minutes, or until the tops are glossy and crackly.
  7. Let the cookies cool on the baking sheet for 5–10 minutes before transferring to a wire rack to cool completely.

Notes

  • Ensure the bowl is clean and dry before mixing to help the batter come together properly.
  • Use room temperature egg whites for better incorporation.
  • Do not overbake—cookies should be slightly soft in the center.
