Filipino Adobo Without Soy Sauce

A classic Filipino dish made by braising meat, usually chicken or pork, in a savory, tangy, and slightly sweet sauce of soy sauce, vinegar, garlic, and spices.

  • 2 lbs chicken thighs and drumsticks
  • 1/2 cup soy sauce
  • 1/2 cup cane vinegar (or white vinegar)
  • 1 cup water
  • 6 cloves garlic, crushed
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 tbsp brown sugar
  • 2 tbsp cooking oil
  • Salt to taste

Instructions

  1. In a large bowl, combine chicken, soy sauce, and half of the garlic. Marinate for at least 30 minutes.
  2. Heat oil in a pot over medium heat. Add remaining garlic and sauté until fragrant.
  3. Add marinated chicken (reserve marinade) and cook until lightly browned.
  4. Pour in the reserved marinade, vinegar, and water. Add bay leaves, peppercorns, and brown sugar.
  5. Bring to a boil without stirring, then lower heat and simmer for 30–40 minutes or until chicken is tender and sauce has reduced.
  6. Season with salt to taste. Serve hot with steamed rice.

Notes

  • You can substitute chicken with pork or use a combination of both.
  • For a thicker sauce, let it simmer uncovered in the last 10 minutes.
  • Some versions add potatoes or boiled eggs.
