Easy Tortilla Pizza Recipe

A lightning-fast, crisp-edged personal pizza made with a flour tortilla instead of traditional dough—perfect for weeknight dinners or late-night cravings.

  • 4 (8-inch) flour tortillas
  • 2 tbsp olive oil, divided
  • 1 cup (240 g) pizza sauce or marinara
  • 1⅓ cups (150 g) shredded low-moisture mozzarella cheese
  • ¼ cup (25 g) grated Parmesan cheese
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • 1 cup mixed toppings (sliced bell peppers, onions, olives, etc.), optional
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat oven to 220 °C / 425 °F. Place two rimmed baking sheets inside while the oven preheats (this helps crisp the tortillas).
  2. Brush both sides of each tortilla lightly with olive oil. Prick a few holes with a fork to prevent puffing.
  3. Carefully lay tortillas on the preheated sheets. Bake 2–3 minutes per side until just starting to brown.
  4. Remove sheets from oven. Spread ¼ cup sauce over each tortilla, leaving a 1 cm border. Sprinkle with mozzarella, then Parmesan. Add oregano, basil, and any toppings.
  5. Return to oven and bake 5–7 minutes, or until cheese is melted and edges are deeply golden.
  6. Season with salt and pepper, slice into wedges, and serve hot.

Notes

  • For extra crispness, place tortillas directly on the oven rack for the final 2 minutes.
  • Use whole-wheat or gluten-free tortillas to suit dietary needs.
  • Swap mozzarella for dairy-free cheese to make the pizza vegan.
  • Leftovers reheat well in a dry skillet over medium heat for 2 minutes.
