- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 3 to 4 tablespoons buttermilk
- Additional sugar for sprinkling
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth and fluffy.
- Beat in the egg, vanilla extract, and almond extract if using.
- Gradually blend in the dry ingredients.
- Add buttermilk, one tablespoon at a time, until the dough is soft but not sticky.
- Roll rounded teaspoonfuls of dough into balls and place on prepared baking sheets.
- Flatten each ball with the bottom of a glass dipped in sugar.
- Bake 8 to 10 minutes in the preheated oven, or until the edges are just beginning to turn golden.
- Allow cookies to cool on baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
- Do not overbake; cookies should be soft in the center.
- You can decorate with icing or sprinkles once cooled.
- Store in an airtight container for up to a week.
