- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup dried brown or green lentils, rinsed
- 6 cups vegetable broth
- 1 (14.5 oz) can diced tomatoes
- Salt and pepper, to taste
- 2 cups spinach or kale (optional)
- Juice of 1 lemon (optional)
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in garlic, cumin, thyme, and bay leaf. Cook for another 1-2 minutes.
- Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat and simmer uncovered for 25-30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Stir in spinach or kale, if using, and cook until wilted.
- Remove bay leaf and stir in lemon juice before serving, if desired.
Notes
- You can blend part of the soup for a creamier texture.
- Red lentils cook faster but result in a softer texture.
- Great for meal prep and freezes well.
