- 2 lb jumbo shrimp, peeled, deveined, tails removed
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 2 tablespoons white wine (or chicken broth)
- 1 ½ cups heavy cream
- 1 teaspoon Italian seasoning
- ½ cup shredded white cheddar (or grated Parmesan)
- 1 tablespoon finely chopped fresh parsley, plus extra for garnish
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Add the shrimp and sear 2–3 minutes per side, just until pink and opaque. Season with the salt and pepper, then transfer to a plate.
- Reduce heat to medium. Melt the butter in the same skillet, add the garlic, and sauté until fragrant, about 1 minute.
- Pour in the white wine, scraping up any browned bits, and simmer for 1 minute.
- Stir in the heavy cream, Italian seasoning, and cheese. Bring to a gentle simmer, stirring until the sauce thickens slightly, 2–3 minutes.
- Return the shrimp (and any juices) to the skillet, tossing to coat evenly. Warm through for 1 minute.
- Garnish with parsley and serve immediately over pasta, rice, mashed potatoes, or with crusty bread for dipping.
