- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup dragonfruit puree (pink/red variety for vibrant color)
- 1/2 cup sour cream
- 1 tbsp lemon juice
- Optional: Dragonfruit slices or cubes for garnish
- Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan to form a crust. Bake for 10 minutes and set aside to cool.
- In a large bowl, beat softened cream cheese until smooth. Add 1/2 cup sugar and vanilla extract, beating until combined.
- Mix in eggs one at a time, beating well after each addition.
- Add dragonfruit puree, sour cream, and lemon juice. Mix until fully incorporated.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 35–40 minutes, or until the center is set but slightly jiggly.
- Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Slice into squares or rectangles. Garnish with dragonfruit slices if desired.
