Delightful Strawberry Crumble Bars Recipe in 50 Mins!

Delicious and easy-to-make strawberry crumble bars with a buttery crust, sweet strawberry filling, and a crumbly topping. Perfect for a quick dessert or snack.

  • 1 cup (2 sticks) unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 3/4 tsp salt
  • 2 1/2 cups all-purpose flour
  • 2 cups fresh strawberries, diced
  • 1 tbsp cornstarch
  • 2 tbsp granulated sugar (for strawberries)
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix melted butter, granulated sugar, brown sugar, vanilla, and salt.
  3. Stir in the flour until a dough forms.
  4. Press about 2/3 of the dough into the prepared baking pan to form the crust.
  5. In another bowl, combine strawberries with cornstarch, sugar, and lemon juice.
  6. Spread the strawberry mixture evenly over the crust.
  7. Crumble the remaining dough over the top of the strawberries.
  8. Bake for 35–40 minutes or until the top is golden and bubbly.
  9. Let cool completely before cutting into bars.

Notes

  • Can substitute with frozen strawberries (thawed and drained).
  • Bars can be stored in the refrigerator for up to 5 days.
  • Great served warm with a scoop of vanilla ice cream.
