- 1 cup (2 sticks) unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 3/4 tsp salt
- 2 1/2 cups all-purpose flour
- 2 cups fresh strawberries, diced
- 1 tbsp cornstarch
- 2 tbsp granulated sugar (for strawberries)
- 1 tbsp lemon juice
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix melted butter, granulated sugar, brown sugar, vanilla, and salt.
- Stir in the flour until a dough forms.
- Press about 2/3 of the dough into the prepared baking pan to form the crust.
- In another bowl, combine strawberries with cornstarch, sugar, and lemon juice.
- Spread the strawberry mixture evenly over the crust.
- Crumble the remaining dough over the top of the strawberries.
- Bake for 35–40 minutes or until the top is golden and bubbly.
- Let cool completely before cutting into bars.
Notes
- Can substitute with frozen strawberries (thawed and drained).
- Bars can be stored in the refrigerator for up to 5 days.
- Great served warm with a scoop of vanilla ice cream.
