- 1 1/2 cups mango puree (fresh or canned)
- 1 1/2 cups coconut milk (full fat)
- 1/4 cup maple syrup or agave nectar
- 2 tsp agar-agar powder
- 1 tsp vanilla extract
- Pinch of salt
- In a saucepan, combine coconut milk, maple syrup, agar-agar powder, and salt. Stir well.
- Bring the mixture to a boil over medium heat, then reduce to a simmer for 3-5 minutes, stirring continuously to activate the agar-agar.
- Remove from heat and mix in the vanilla extract and mango puree until well combined.
- Pour the mixture into serving glasses or molds and let it cool to room temperature.
- Refrigerate for at least 2-4 hours or until set.
- Serve chilled. Optionally, top with extra mango puree or fresh mango slices.
Notes
- Use ripe mangoes for best flavor and natural sweetness.
- Do not use gelatin if keeping this recipe vegan—agar-agar is the plant-based alternative.
- You can substitute other non-dairy milks, but full-fat coconut milk gives the creamiest texture.
