- 1/2 medium cucumber, peeled and roughly chopped
- 1/4 cup (60 ml) fresh lime juice (about 2 limes)
- 2 cups (480 ml) chilled sparkling water
- 2 Tbsp (30 ml) simple syrup, or to taste
- 1 cup ice cubes
- 4 fresh mint leaves (optional)
- Cucumber ribbons or slices, for garnish
- Lime wheels, for garnish
- Purée the chopped cucumber and lime juice in a blender until smooth.
- Strain the mixture through a fine-mesh sieve into a small pitcher, pressing to extract as much liquid as possible; discard pulp.
- Fill two tall glasses with ice. Divide the cucumber-lime mixture evenly between them.
- Add simple syrup to each glass, then top with sparkling water. Stir gently to combine.
- Slap the mint leaves between your palms to release aroma and tuck into the drinks. Garnish with cucumber ribbons and lime wheels. Serve immediately.
Notes
- Adjust sweetness by adding more or less simple syrup, or substitute agave for a vegan, refined-sugar-free option.
- For an herby twist, muddle basil instead of mint.
- Add a splash of gin or vodka for an adult version.
