Cucumber Feta Salad

A light and refreshing Cucumber Feta Salad combining crisp cucumbers, tangy feta cheese, and a zesty dressing — perfect for summer meals or as a healthy side dish.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 3/4 cup feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers and red onion.
  2. Add the crumbled feta cheese and chopped fresh dill.
  3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper.
  4. Pour the dressing over the cucumber mixture and toss gently to combine.
  5. Chill in the refrigerator for 15–20 minutes before serving for best flavor.

  • Use English cucumbers for fewer seeds and thinner skin.
  • Add cherry tomatoes or kalamata olives for variation.
