Crockpot White Chicken Chili

A comforting and creamy crockpot white chicken chili made with tender chicken, white beans, green chiles, and warming spices – perfect for cozy nights.

  • 1 lb boneless skinless chicken breasts
  • 1 (15 oz) can white beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chiles
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 tbsp lime juice (optional)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add white beans, corn, green chiles, onion, and garlic over the chicken.
  3. Sprinkle cumin, chili powder, paprika, oregano, salt, and pepper over the ingredients.
  4. Pour in the chicken broth.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Remove the chicken, shred it with two forks, and return it to the crockpot.
  7. Add cream cheese and sour cream, stirring until melted and well combined.
  8. Cook on high for an additional 15-20 minutes until creamy.
  9. Stir in lime juice, if using, and serve garnished with fresh cilantro.

Notes

  • You can use rotisserie chicken to save time; reduce cook time accordingly.
  • Adjust the spice level by adding jalapeños or more chili powder.
  • Freezes well for up to 3 months in an airtight container.
