Creamy Chicken with Sun-Dried Tomatoes

A rich and flavorful dish made with tender chicken breasts in a creamy garlic sauce, enhanced with sun-dried tomatoes and herbs. Perfect for a comforting dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh basil, chopped (optional)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat and sear chicken until golden brown on both sides and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute.
  4. Pour in chicken broth and heavy cream, stirring to combine.
  5. Add Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Simmer for 5–7 minutes until the sauce thickens.
  6. Return chicken to the skillet and spoon sauce over the top. Simmer for 3–5 more minutes to heat through.
  7. Garnish with fresh basil before serving, if using.

Notes

  • Serve with pasta, rice, or crusty bread to soak up the sauce.
  • You can substitute sun-dried tomatoes in oil with dry-packed ones, but rehydrate them first.
  • Use half-and-half instead of heavy cream for a lighter version.
