  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • 8 oz semi-sweet or dark chocolate, chopped
  • 1/2 teaspoon peppermint extract (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, and salt.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Mix in the peppermint and vanilla extracts.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Roll the dough out to about 1/4-inch thickness between two sheets of parchment paper. Chill for 30 minutes.
  6. Cut out round cookies using a 2-inch cutter and place on prepared baking sheet.
  7. Bake for 10–12 minutes, then let cool completely on a wire rack.
  8. In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring until smooth. Stir in peppermint extract.
  9. Dip each cooled cookie into the melted chocolate to coat fully, then place on a parchment-lined tray.
  10. Refrigerate until the chocolate is set, about 30 minutes.
