- 8 oz chorizo sausage
- 6 large eggs
- 1/4 cup milk
- 1 tbsp olive oil
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced onions
- 1/4 cup chopped fresh cilantro
- 1 medium tomato, diced
- 1 avocado, sliced
- 1/4 cup salsa (optional)
- 6 small flour or corn tortillas
- Salt and pepper to taste
- Heat olive oil in a skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until fully cooked, about 6-8 minutes.
- Remove chorizo from the skillet and set aside. Leave a small amount of fat in the pan.
- In a bowl, whisk eggs with milk, salt, and pepper. Pour into the skillet and scramble until just set.
- Return cooked chorizo to the skillet with the eggs. Stir gently to combine.
- Warm tortillas in a dry pan or microwave until soft and pliable.
- Assemble tacos by spooning the chorizo and egg mixture onto each tortilla.
- Top with shredded cheese, diced onions, tomatoes, avocado slices, cilantro, and salsa if using.
- Serve immediately while warm.
Notes
- Use Mexican chorizo for a spicier, crumbly sausage. Spanish chorizo is firmer and cured.
