Chorizo Breakfast Tacos

Savory and spicy chorizo breakfast tacos packed with scrambled eggs, melted cheese, and fresh toppings, perfect for a hearty morning meal.

  • 8 oz chorizo sausage
  • 6 large eggs
  • 1/4 cup milk
  • 1 tbsp olive oil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • 1 medium tomato, diced
  • 1 avocado, sliced
  • 1/4 cup salsa (optional)
  • 6 small flour or corn tortillas
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chorizo and cook, breaking it up with a spoon, until fully cooked, about 6-8 minutes.
  2. Remove chorizo from the skillet and set aside. Leave a small amount of fat in the pan.
  3. In a bowl, whisk eggs with milk, salt, and pepper. Pour into the skillet and scramble until just set.
  4. Return cooked chorizo to the skillet with the eggs. Stir gently to combine.
  5. Warm tortillas in a dry pan or microwave until soft and pliable.
  6. Assemble tacos by spooning the chorizo and egg mixture onto each tortilla.
  7. Top with shredded cheese, diced onions, tomatoes, avocado slices, cilantro, and salsa if using.
  8. Serve immediately while warm.

Notes

  • Use Mexican chorizo for a spicier, crumbly sausage. Spanish chorizo is firmer and cured.
  • Can substitute cheese with a dairy-free version for lactose-sensitive diets.
  • For extra heat, add jalapeños or hot sauce.
