Chocolate Lava Cake

A rich and decadent chocolate dessert with a gooey molten center, perfect for special occasions or an indulgent treat.

Ingredients

  • 1/2 cup (115g) unsalted butter
  • 6 oz (170g) semi-sweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1/8 tsp salt
  • 2 tbsp all-purpose flour
  • Butter and cocoa powder for greasing ramekins
  • Optional: powdered sugar or ice cream for serving

Instructions

  1. Preheat oven to 425°F (220°C). Butter and dust four 6-ounce ramekins with cocoa powder. Tap out the excess and place on a baking sheet.
  2. In a double boiler or microwave, melt butter and chocolate together until smooth. Let cool slightly.
  3. In a mixing bowl, whisk together eggs, egg yolks, sugar, and salt until thickened and pale.
  4. Gently fold in the melted chocolate mixture into the egg mixture.
  5. Sift in the flour and fold gently until combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 12–14 minutes, or until the edges are set but the center is still soft.
  8. Let cakes rest for 1 minute, then carefully invert onto plates.
  9. Serve immediately with powdered sugar or a scoop of ice cream if desired.

Notes

  • Do not overbake or the center will cook through.
  • You can prepare the batter ahead and refrigerate, then bake just before serving.
  • Use high-quality chocolate for best flavor.
