- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp espresso powder (optional)
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup heavy cream (for ganache)
- 8 oz semi-sweet or dark chocolate, chopped (for ganache)
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
- Add milk, oil, eggs, and vanilla to the dry ingredients and beat until well combined.
- Carefully stir in the boiling water. The batter will be thin.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool cakes in pans for 10 minutes, then remove and cool completely on wire racks.
- To make the ganache, heat the heavy cream in a saucepan over medium heat until it just begins to simmer.
- Remove from heat and pour over the chopped chocolate in a heatproof bowl. Let sit for 5 minutes, then stir until smooth and glossy.
- Level the cakes if necessary, then stack and frost with your choice of filling and frosting.
- Pour the ganache over the top of the cake, gently pushing it to the edges so it drips down the sides.
- Let the ganache set before serving or decorating further.
