- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cups cooked white or brown rice
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Sour cream or Greek yogurt for topping (optional)
- In a bowl, combine chicken slices with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well and let marinate for 10–15 minutes.
- Heat a large skillet over medium-high heat and cook the marinated chicken until browned and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add a bit more oil if needed and sauté the sliced peppers and onion until soft and slightly charred, about 5–7 minutes.
- Warm the cooked rice if needed and divide into serving bowls.
- Top rice with cooked chicken, sautéed vegetables, and optional toppings like cheese, cilantro, lime wedges, and sour cream.
- Serve immediately and enjoy!
