Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 cups cooked rice (white or brown)
  • 1/2 cup shredded cheese (optional)
  • 1/2 cup salsa or pico de gallo
  • 1/2 cup sour cream or Greek yogurt
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, mix olive oil, chili powder, cumin, paprika, garlic powder, onion powder, red pepper flakes, salt, and pepper.
  2. Add the chicken strips to the bowl and toss to coat evenly. Let marinate for 10–15 minutes.
  3. Heat a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes or until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add a bit more oil if needed and sauté the sliced bell peppers and onions for 5–6 minutes until tender-crisp.
  5. Assemble the bowls: add a base of cooked rice, then top with chicken, sautéed vegetables, cheese, salsa, sour cream, avocado slices, and chopped cilantro.
  6. Serve with lime wedges for extra flavor.

Notes

  • Substitute rice with cauliflower rice for a low-carb option.
  • You can use pre-cooked or rotisserie chicken to save time.
  • Add black beans or corn for extra texture and nutrition.
