Chicken Burrito Bowl

A vibrant, customizable bowl combining seasoned grilled chicken, cilantro-lime rice, black beans, fresh corn salsa, and creamy avocado for a nutritious and satisfying meal.

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into 1” cubes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 2 cups cooked long-grain white rice
  • 1 lime, zested and juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup fresh or frozen corn kernels
  • 1 cup cherry tomatoes, quartered
  • 1 small red onion, finely diced
  • 1 avocado, sliced
  • ¼ cup crumbled queso fresco or feta (optional)
  • Salsa, sour cream, and hot sauce, for serving (optional)

Instructions

  1. In a bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add chicken cubes and toss to coat evenly.
  2. Heat a large skillet over medium-high heat. Add seasoned chicken and cook 6–8 minutes, stirring occasionally, until cooked through and lightly charred. Remove from heat.
  3. In a separate bowl, stir lime zest, lime juice, and cilantro into warm cooked rice.
  4. Divide cilantro-lime rice among 4 bowls. Top each with black beans, corn, cherry tomatoes, red onion, and grilled chicken.
  5. Garnish with avocado slices and queso fresco, if using. Serve immediately with salsa, sour cream, and hot sauce on the side.

Notes

  • For extra flavor, marinate chicken 30 minutes ahead in the spice blend mixture.
  • Substitute brown rice or cauliflower rice for a lower-carb option.
  • Make it vegetarian by swapping chicken for roasted sweet potato or tofu.
  • Leftovers keep airtight in the fridge up to 3 days; reheat gently.
  • Drizzle with chipotle mayo or cilantro crema for a creamy twist.
