Cherry Almond Loaf Cake

A moist and flavorful cherry almond loaf cake featuring sweet cherries and nutty almond flavor, perfect for tea time or dessert.

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 tsp almond extract
  • 1/2 cup milk
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/4 cup sliced almonds
  • 1 tbsp all-purpose flour (for coating cherries)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, whisk together 1 1/2 cups flour, baking powder, and salt. Set aside.
  3. In another large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then add the almond extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Toss the cherries with 1 tbsp flour to prevent sinking, then gently fold them into the batter.
  7. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle sliced almonds on top.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use frozen cherries without thawing to prevent excess moisture.
  • To enhance almond flavor, add a few drops of almond essence.
  • Store in an airtight container for up to 3 days.
