Cheesy Potato Burritos

Hearty burritos stuffed with crispy potatoes, seasoned beef, gooey cheese, sour cream, and chipotle sauce—comfort food wrapped in a tortilla.

Ingredients

  • 1 lb ground beef (or turkey/plant‑based)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chipotle sauce (e.g. Taco Bell)
  • 6 large flour tortillas
  • Salt & pepper to taste
  • Optional toppings: diced tomatoes, chopped green onions, cilantro

Instructions

  1. Preheat oven and bake tater tots until golden‐crispy (~20‑25 min).
  2. While tots bake, brown ground beef in skillet, season with salt & pepper, drain grease.
  3. Let tots cool slightly, then gently crush in a large bowl.
  4. Add beef, cheddar, and Monterey Jack to bowl; mix well.
  5. Warm tortillas briefly to make them pliable.
  6. Divide filling among tortillas; top each with chipotle sauce and sour cream.
  7. Fold sides, roll into burritos; place seam‑side down in baking dish.
  8. Sprinkle remaining cheese on top; bake 5‑10 min until cheese melts.
  9. Garnish with tomatoes, green onions, cilantro; serve with extra sour cream/ sauce.

Notes

  • Warming tortillas prevents tearing.
  • Don’t overfill—easier to roll tightly.
  • Can prepare ahead and bake later.
  • Freezes well—wrap individually before baking.
