Carrot Cake Energy Balls

These Carrot Cake Energy Balls are a healthy, no-bake snack packed with the flavors of classic carrot cake. Perfect for on-the-go fuel or a guilt-free dessert.

  • 1 cup rolled oats
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup pitted dates
  • 1/4 cup walnuts
  • 1/4 cup shredded coconut (unsweetened)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup or honey
  • 2 tbsp almond butter or peanut butter

Instructions

  1. Add oats, walnuts, shredded coconut, and spices (cinnamon, nutmeg, ginger, and salt) to a food processor and pulse until coarsely ground.
  2. Add grated carrots, pitted dates, vanilla extract, maple syrup (or honey), and almond butter (or peanut butter).
  3. Process until mixture is well combined and sticky enough to hold together. If too dry, add a bit more syrup or nut butter.
  4. Scoop about 1 tablespoon of the mixture and roll into balls using your hands.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.

Notes

  • You can use pre-shredded carrots to save time, but freshly grated ones offer better moisture and flavor.
  • Feel free to add raisins or a pinch of cloves for more carrot cake flavor.
  • Use gluten-free oats for a gluten-free version.
