Carrot Birthday Cake

A moist and flavorful carrot birthday cake made with freshly grated carrots, warm spices, and topped with a rich cream cheese frosting—perfect for celebrations.

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • ½ cup chopped walnuts (optional)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened (for frosting)
  • ½ cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs, then add oil and vanilla extract. Stir in grated carrots and crushed pineapple.
  4. Gradually mix the wet ingredients into the dry ingredients until well combined. Fold in chopped walnuts if using.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in pans for 10 minutes, then remove to wire racks to cool completely.
  7. To make the frosting, beat cream cheese and butter together until smooth. Add powdered sugar gradually, then mix in vanilla extract.
  8. Once the cakes are completely cooled, frost the top of one layer, place the second layer on top, and frost the top and sides of the entire cake.
  9. Decorate as desired and refrigerate until ready to serve.

Notes

  • Ensure carrots are finely grated for even moisture.
  • You can substitute applesauce for half the oil for a lighter version.
  • The cake can be made a day ahead and stored refrigerated.
