Carnitas Burrito Bowls are a flavorful and hearty dish made with tender shredded pork carnitas, rice, beans, and fresh toppings. Perfect for meal prep or a satisfying dinner.

  • 2 lbs pork shoulder, boneless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 2 cups cooked white or brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes or pico de gallo
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup sour cream or Greek yogurt (optional)
  • Lime wedges, for serving

Instructions

  1. Season the pork shoulder with salt, pepper, cumin, chili powder, oregano, garlic powder, onion powder, and cayenne pepper.
  2. Heat olive oil in a large skillet or slow cooker insert over medium-high heat. Sear the pork on all sides until browned.
  3. Transfer the pork to a slow cooker. Add orange juice and lime juice.
  4. Cook on low for 8 hours or high for 4-5 hours, until the pork is tender and easy to shred.
  5. Remove the pork from the slow cooker, shred it using two forks, and return it to the juices to soak up the flavor.
  6. To make the burrito bowls, layer cooked rice, black beans, corn, and shredded carnitas in a bowl.
  7. Top with lettuce, tomatoes or pico de gallo, avocado, cilantro, cheese, and sour cream as desired.
  8. Serve with lime wedges on the side.

  • For a crispier texture, broil the shredded carnitas on a baking sheet for 5-7 minutes before serving.
  • Use quinoa or cauliflower rice for a low-carb version.
