- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1 cup chopped pecans
- 1/2 cup caramel sauce (store-bought or homemade)
- 1 tbsp all-purpose flour
- Preheat oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
- Bake crust for 10 minutes, then set aside to cool slightly.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs, one at a time, mixing well after each. Stir in vanilla extract and sour cream.
- Pour cheesecake mixture over the cooled crust and smooth the top.
- Bake for 30–35 minutes or until center is set. Let cool at room temperature, then refrigerate for at least 3 hours.
- In a small bowl, toss chopped pecans with flour. Spread over the chilled cheesecake layer.
- Drizzle caramel sauce evenly over the pecans.
- Refrigerate again for 30 minutes to set before slicing into bars.
