- 1 lb large shrimp, peeled and deveined
- 2 cups corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (optional)
- In a bowl, toss shrimp with Cajun seasoning, smoked paprika, and a pinch of salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove and set aside.
- In the same skillet, add more oil if needed, then sauté onion, garlic, and bell peppers for about 4–5 minutes until softened.
- Add corn and cook for another 2–3 minutes.
- Return shrimp to the skillet and stir to combine. Add lemon juice and adjust seasoning if needed.
- Garnish with chopped parsley and serve hot.
Notes
- Use frozen corn if fresh is not available—no need to thaw.
- Adjust Cajun seasoning to your spice preference.
- Serve with rice, quinoa, or crusty bread for a complete meal.
