Cajun Shrimp and Corn Skillet

A bold and savory one-pan Cajun dish featuring tender shrimp, sweet corn, and vibrant bell peppers cooked in a flavorful spice blend.

  • 1 lb large shrimp, peeled and deveined
  • 2 cups corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a bowl, toss shrimp with Cajun seasoning, smoked paprika, and a pinch of salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove and set aside.
  4. In the same skillet, add more oil if needed, then sauté onion, garlic, and bell peppers for about 4–5 minutes until softened.
  5. Add corn and cook for another 2–3 minutes.
  6. Return shrimp to the skillet and stir to combine. Add lemon juice and adjust seasoning if needed.
  7. Garnish with chopped parsley and serve hot.

Notes

  • Use frozen corn if fresh is not available—no need to thaw.
  • Adjust Cajun seasoning to your spice preference.
  • Serve with rice, quinoa, or crusty bread for a complete meal.
