Cabbage Roll Soup

Cabbage Roll Soup is a hearty and comforting dish that captures all the flavors of traditional cabbage rolls, but in a convenient soup form. It’s packed with cabbage, ground meat, rice, and vegetables in a rich tomato broth.

  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup cooked rice
  • 1/2 head cabbage, chopped
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground meat and cook until browned, breaking it up as it cooks.
  2. Add the chopped onion and garlic to the pot and sauté for about 3 minutes, until softened.
  3. Stir in the tomato paste, diced tomatoes, and beef broth. Bring to a simmer.
  4. Add the chopped cabbage, cooked rice, basil, oregano, salt, pepper, and smoked paprika. Stir to combine.
  5. Cover the pot and simmer the soup for 30 minutes, or until the cabbage is tender.
  6. Adjust seasoning with salt and pepper to taste. Stir in apple cider vinegar if using, to add a touch of brightness.
  7. Serve hot, and enjoy!

Notes

  • This soup can be made ahead of time and stored in the fridge for up to 4 days.
  • If you prefer a spicier version, add a pinch of red pepper flakes or a dash of hot sauce.
  • For a vegetarian version, substitute the ground meat with lentils or a plant-based protein and vegetable broth instead of beef broth.
