- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 can (15 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup cooked rice
- 1/2 head cabbage, chopped
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar (optional)
- In a large pot, heat olive oil over medium heat. Add the ground meat and cook until browned, breaking it up as it cooks.
- Add the chopped onion and garlic to the pot and sauté for about 3 minutes, until softened.
- Stir in the tomato paste, diced tomatoes, and beef broth. Bring to a simmer.
- Add the chopped cabbage, cooked rice, basil, oregano, salt, pepper, and smoked paprika. Stir to combine.
- Cover the pot and simmer the soup for 30 minutes, or until the cabbage is tender.
- Adjust seasoning with salt and pepper to taste. Stir in apple cider vinegar if using, to add a touch of brightness.
- Serve hot, and enjoy!
Notes
- This soup can be made ahead of time and stored in the fridge for up to 4 days.
- If you prefer a spicier version, add a pinch of red pepper flakes or a dash of hot sauce.
- For a vegetarian version, substitute the ground meat with lentils or a plant-based protein and vegetable broth instead of beef broth.
