Buttery Shortbread Cookies

Classic buttery shortbread cookies with a tender, crumbly texture and rich flavor. Perfect for tea time or holiday treats.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour

Instructions

  1. Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter, powdered sugar, and granulated sugar together until light and fluffy.
  3. Add the vanilla extract and salt, and mix until combined.
  4. Gradually add the flour, mixing just until the dough comes together. Do not overmix.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thick, or press into a baking pan for bar-style cookies.
  6. Cut into desired shapes using cookie cutters or slice into squares or fingers.
  7. Place cookies on the prepared baking sheet, spacing them about 1 inch apart.
  8. Bake for 15–20 minutes or until the edges are just beginning to turn golden.
  9. Remove from oven and let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Do not overbake; the cookies should remain pale with just a hint of golden color.
  • For a flavor twist, add lemon zest or almond extract.
  • Dough can be chilled for 30 minutes to make rolling and cutting easier.
