Bruschetta Stuffed Chicken is a flavorful dish where juicy chicken breasts are filled with a fresh tomato, basil, and garlic bruschetta mixture, then baked to perfection.

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix diced cherry tomatoes, red onion, garlic, basil, mozzarella, balsamic vinegar, olive oil, salt, pepper, and red pepper flakes.
  3. Cut a pocket in each chicken breast without cutting all the way through.
  4. Stuff the bruschetta mixture evenly into each chicken breast.
  5. Season the outside of the chicken with salt, pepper, and Italian seasoning.
  6. Heat a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until fully cooked.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

  • You can secure the chicken breasts with toothpicks to keep the filling inside while cooking.
  • Use fresh mozzarella for a creamier texture.
  • Serve with a side salad or roasted vegetables for a complete meal.
