Bruschetta Chicken Pasta

A bright, garden-fresh twist on chicken pasta: tender pan-seared chicken over angel-hair tossed with a classic bruschetta mix of ripe tomatoes, basil, garlic, olive oil and balsamic.

  • 3 boneless, skinless chicken breasts, halved horizontally
  • 1 cup Italian salad dressing
  • 1 tsp garlic powder
  • 1 tsp salt, divided
  • 1 tsp freshly ground black pepper, divided
  • 8 Roma tomatoes, seeded and chopped
  • 6 fresh basil leaves, chopped (plus extra for garnish)
  • 1 head garlic, cloves peeled and chopped
  • 1/3 cup extra-virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1 lb angel-hair pasta
  • 1/3 cup vegetable oil (for searing)
  • 1 yellow onion, chopped
  • 2 Tbsp olive oil (for sautéing onion)

Instructions

  1. Place chicken, Italian dressing, garlic powder, ½ tsp salt and ½ tsp pepper in a resealable bag; marinate in the refrigerator for 15 minutes to 4 hours.
  2. Combine tomatoes, basil, chopped garlic, ⅓ cup olive oil and balsamic vinegar in a bowl; season with remaining salt and pepper and let stand.
  3. Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade, discard marinade, and sear 5–7 minutes per side until cooked through (165 °F/74 °C). Transfer to a plate, rest 5 minutes, then slice.
  4. Meanwhile, cook angel-hair in a pot of salted boiling water 4–5 minutes until al dente; drain.
  5. Pour off excess oil from skillet, add 2 Tbsp olive oil and onion; cook 3–4 minutes until translucent. Stir in bruschetta mixture and warm 3–4 minutes.
  6. Add drained pasta to skillet and toss to coat. Top with sliced chicken, garnish with basil and serve warm or at room temperature.

Notes

  • Finish with a drizzle of balsamic glaze or a shower of shaved Parmesan for extra depth.
  • Swap angel-hair for whole-wheat pasta or zucchini noodles to lighten the dish.
  • Leftovers keep up to 3 days refrigerated; reheat with a splash of olive oil or enjoy cold as pasta salad.
  • For quicker prep, mix the bruschetta topping while the chicken marinates.
