Brownie Mix Cookies

Quick and easy Brownie Mix Cookies made with just a few ingredients. These soft, chewy cookies have a rich chocolate flavor and are perfect for a quick dessert fix.

  • 1 box (18.3 oz) brownie mix
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and flour. Stir until well combined and a thick dough forms.
  3. Fold in chocolate chips if using.
  4. Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheet about 2 inches apart.
  5. Bake for 8–10 minutes, or until the edges are set and the centers look slightly underbaked.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Do not overbake—cookies will continue to cook slightly as they cool.
  • Optional add-ins include nuts or white chocolate chips.
  • Store in an airtight container for up to 5 days.
